It is Mouthwatering Monday and I am sharing my favorite smoothie recipe. Since starting The Virgin Diet almost 8 months ago, I have completely changed my eating lifestyle. You can read more about my journey in these posts:
I often get asked, what do you eat for breakfast if you can't have eggs, gluten, or corn since they make up the majority of breakfast foods. It is true that when following this diet you do have to think outside the box when it comes to breakfast. This isn't a bad thing though! As a result, I have found new foods that I love that are so much better for me. A morning smoothie or shake is an easy replacement for that high calorie morning meal. This combination of pineapple, vanilla and blackberries is so sweet and refreshing for any morning. I also enjoy it as dessert after dinner sometimes. Pineapple does contain a good deal of natural sugar, so this is not an every day kind of smoothie. Use this more as a pick me up or special treat every once in a while.
I always try to keep my freezer stocked with frozen fruit. You can buy fresh fruit and flash freeze them or just buy the store bags. I usually buy the store brand frozen fruit (since it is always available), but will buy organic fresh fruit when it is on sale. To flash freeze fruit wash, dry and slice if needed, then place on a cookie sheet in a single layer and place in freezer for several hours. Once frozen, simply bag the fruit and label them.

Vanilla Pineapple Blackberry Smoothie
by A TIPical Day
1 cup Vanilla Almond Milk
1 scoop Allergy Free Protein Powder
1 tsp Chia Seeds
1 tsp Cinnamon
1/4 frozen Pineapple
1/4 frozen Blackberries
Add ingredients to a blender in the order given. Blend until smooth. pour in a glass and enjoy! If too thick add more milk. If too thin add more fruit.
Makes 1 serving

This sounds like a great paleo option too. Breakfast can be tough when you're so restricted!
